Therefore, the different properties of buckwheat are of great significance so that it could be incorporated in multiple food system to increase functionality. In the light of above benefits, a study was conducted to understand the effect of germination on morphological, thermal and pasting properties of buckwheat flour derived from germinated and non-germinated grains. Results revealed germination caused a significant decrease in different viscosities viz., peak, trough, breakdown, setback and final viscosity. It also caused the reduction in gelatinization temperature of starch in buckwheat flour measured using Differential scanning calorimetry (DSC) when heated at constant rate. In addition to this loss in birefringence of starch molecule due to breakdown of amylopectin which is responsible for crystallinity with a large decrease in gelatinization energy. Thus, crystalline starch was changed to amorphous form in germinated grain. The swelling capacity of flour derived from germinated grains was found to be significantly increased (p<0.05). The neutral detergent fibre, acid detergent fibre, acid detergent lignin, cellulose and hemicellulose were also determined. Flowers, leaves, stalk and roots showed varying levels of dietary fibre and polyphenols. The highest content of neutral and acid detergent fibre were found in the roots (63.92 and 45.45% d.m., respectively) while the most rich in phenolic compounds were flowers (4.8 mg/1 g d.m.). Root and stalk contained the highest level of cellulose, 38.70 and 25.57% d.m., respectively. Routine analyses were performed using an Agilent Technologies1200 series high pressure liquid chromatography (HPLC), including a binary pump, vacuum degasser, auto sampler, diode array detector, and coupled to an Agilent Technologies 1200 series Model VL single quadrupole mass spectrometer equipped with an multimode ionization interface. The aim of the experiments was to evaluate the influence of cultivar, nutrition and year on main technological quality parameters (thousand achenes weight, volume weight, proportion of fractions on sieves 4.5 and 4 mm, proportion of husks and yield of groats). The differences were observed between buckwheat cultivars in all observed parameters of technological value. Nitrogen fertilisation before sowing (50 kg.ha–1) did not influence any parameter. On the contrary, buckwheat technological value was influenced by sequence weather (particularly rainfalls) during flowering and achenes formation periods (July).
