acids, minerals and B vitamins as compared with other cereals. It can grow and survive in harsh natural condition, even with a low amount of fertilizer. Buckwheat is also referred as a good antioxidant source. Although it contains allergens and has low digestibility due to high fiber content and some anti-nutritive factors in grain, Buckwheat can provide valuable nutrients to suppprt human and animal health. It may successfully replace other cereals in human food and animal feed when facing with the change condition of climate in the future. was carried out at the PCSIR Labs Peshawar, Pakistan. For this purpose samples of common buckwheat (Fagopyrum esculentum) from different altitudes of Gilgit-Baltistan were analyzed. The results of the present investigation showed that buckwheat of high altitude (both Gilgit and Baltistan region) was high in protein, fat, and ash, and low in nitrogen free extract and fiber, while the buckwheat of lower altitude (both Gilgit and Baltistan region) was high in nitrogen free extract and fiber and low in protein, fat, and ash. Gluten content was not detected in all the samples. Similarly high concentration of Potassium almost three times of sodium was recorded, indicating a good source for patients with hypertension. It is a low input crop whose cultivation has persisted through centuries of civilization in almost every country where cereals were cultivated. The crop is an important source of rutin, an important flavonoid which is known to have cardioprotective, vasoprotective, antihypertensive, anti-inflammation, cytoprotective and anti-diabetic properties. Grains of buckwheat are a rich source of protein with a balanced amino acid composition, gluten free flour, dietary fibre, vitamins, resistant starch, phytosterols, fagopyrins, fagopyritols and phenolic compounds. Buckwheat is a short season crop which completes its life cycle in 70-90 days and can grow in wide range of environmental conditions including marginal lands and rocky, poorly tilled soils.
