1000px) 100vw, 1000px" /></a></p> <p>&nbsp;</p> <p>&nbsp;</p> <p>Tomatflak, eller t酶rket tomat, er et forholdsvis nytt krydder som har 氓pnet opp for et vell av nye og spennende matretter. Med en smakstone mellom solt酶rket tomat og fersk tomat er dette en smakssetter perfekt tilpasset det spanske og italienske kj酶kkenet. Og s氓 er tomatflak utrolig praktiske i kj酶kkenet!</p> <p>Som ved de fleste innovasjoner er det i f酶rste omgang matindustrien som har kastet seg over tomatflakene for 氓 transportere og produsere alt fra sauser til marinader og ferdigprodukter. Men dette krydderet, som utelukkende best氓r av tomater, begynner 氓 f氓 sin anvendelse i restaurantkj酶kken og bli tilgjengelig i krydderhyllene p氓 kontinentet.</p> <p>Tomatflak gir en sydensmak p氓 de fleste matretter, og muliggj酶r bruk av tomat der vi ikke vil ha ekstra v忙ske i matlagingen. Dermed blir flakene s忙rlig anvendelig n氓r vi for eksempel 酶nsker 氓 marinere kj酶tt, fisk eller kylling. Eller n氓r vi skal ha en tomattone i sauser og kremer som allerede har sin konsistens, blant annet majonesbaserte sauser.</p> <p>Personlig bruker jeg tomatflakene oftest til risen &#8220;arroz al ajillo&#8221; (se oppskrift nedenfor), som bilag til stekt eller grille kj酶tt eller fisk. Eller jeg blander dem i kj酶ttdeigen eller -farsen (eller fiskefarsen) for 氓 lage kj酶ttkaker, hamburgere eller fiskekaker.</p> <p>Men tomatflakene kan ogs氓 med fordel brukes i baksten! Br酶d med tomatnote. Pizzo (nei, ikke pizza) fra Nord-Italia. Eller i en focaccia, eller i pastadeigen. Eller ogs氓 s酶t bakst.</p> <p>Tomatflakene blander den klassiske tomatsmaken med moderne koketeknikker. Og det 氓pner nye muligheter for inkludering av den kj忙re tomatsmaken. Hakk hvitl酶k og chili. Skyll risen i kaldt vann. Varm olje til h酶y temperatur i en gryte (helst non-stick). Stek l酶ken glassaktig og ha etter hvert i hvitl酶k, chili og tomatflak. Demp temperaturen. Ha i buljongterningen og deretter risen. Fres litt under omr酶ring. Ha raskt i vannet, og r酶r. Sett p氓 h酶y varme, kok opp risen under lokk og demp s氓 varmen til et minimum. La trekke/sm氓koke i 8-10 minutter (risen skal v忙re bl酶t utenp氓 men litt hard inni). Skru s氓 av varmen men la risen trekke i 5-10 minutter til under et tett lokk. R酶r inn hakket bladpersille ved servering, og ha gjerne i litt <a href="http://verdensmat.no/?page_id=1571">ekstra god olivenolje</a>.</p> <p>Denne risretten (egentlig en enkel risotto) serveres varm, typisk som bilag til kj酶tt, fisk, eller fugl lagd p氓 spansk, s酶rfransk, italiensk eller kroatisk m氓te. Legg samtidig tomatflakene i 2-3 ss vann i noen minutter. Varm en stor panne med noe olivenolje og stek skivet hvitl酶k og hakket chili p氓 middels varme i rundt 5 minutter. N氓r pastaen er s氓 氓 si ferdig, ha sardinene og tomatflakene i pannen og r酶r lett slik at fisken ikke faller helt fra hverandre. R酶r gjerne inn rundt halvparten av oljen fra sardinboksene, litt pastavann dersom n酶dvendig, og ha i en liten klype salt. Skru av varmen. Sil bort kokevannet fra pastaen og r酶r denne inn i pannen med sardiner og tomatflak. R酶r ogs氓 inn hakket persille og litt ekstra god olje.</p> <p>Server varmt.
