“民以食为天”。温州人在创造数千年文明历史的同时，也创造了灿烂的美食文化。 </P><P> <STRONG>瓯菜</STRONG> 是温州美食文化的主体部分。它作为浙江菜系的一个独立流派，具有明显的地方特色：以海鲜入馔为主，口味清鲜滑嫩，淡而不薄。烹调讲究"二轻一重"，即轻油、轻茨、重刀工，注重菜肴造型精巧美观。 </P><P> 瓯菜作为一种美食文化，既表达了温州人的热情好客，又体现了温州民间的风俗礼仪。不同的宴席，瓯菜有不同的礼仪表达形式，如新年酒，上的第一道菜就是炒年糕，若是寿宴，第一道菜一定是"长寿面"，结婚宴席，新娘席上冷盘非摆成龙凤盘不可。无论什么类型的宴席，一般都要摆上四个冷盘菜（现在有的改摆六个或八个小盘，品种花色更加丰富），待客人到齐后上主菜，上一道，吃一道，再上一道，这样一道一道地上。最后一道菜必定是甜食，象征今后的生活甜甜蜜蜜。 </P><P> 瓯菜的名菜佳肴极为丰富，这里只向朋友介绍几款有代表性的美馔珍馐。</P><P> <STRONG>三丝敲鱼</STRONG> 这是温州民间传统佳肴，相传已有百余年的历史，直至今日，每逢年过过节，亲朋相聚，常以此菜款待客人。取用新鲜鱼肉、蘸淀粉、槌敲成薄片，佐以鸡脯丝、火腿丝、香菇丝烹制以成。汤清味醇，鲜嫩爽滑，色泽调和，独具风格。</P><P> <STRONG>锦绣鱼丝</STRONG> 系特一级烹调师金次凡制作。取黑鱼背脊肉切成细丝，配红绿柿椒丝，黄蛋皮丝，棕香菇丝炒制而成，此菜色绚丽和谐，口味滑嫩香鲜，深得美食家赞许。</P><P> <STRONG>蒜子鱼皮</STRONG> 以鲨鱼皮为主料，加大蒜子烩烹而成，具有蒜香浓郁、鱼皮软糯、法浓味鲜的特色，是瓯菜中甚受大众推崇的热菜之一。据《本草纲目》记载，鲨鱼皮"刮沾去沙，剪作鱼会，为食品美味，食这益人"，有"解诸鱼毒，杀虫、愈虚劳"之功能。 </P><P> <STRONG>爆墨鱼花</STRONG> 这是一只刀工、火候并重的瓯菜名肴。先将墨鱼切成无数横竖虚刀，而且再切成棱形或长方形，加热后自然卷曲成麦穗状，造型非常美观，爆制时芡紧卤汁，脆嫩爽口。没有深厚的烹调功底，难以发挥其特色。 </P><P> <STRONG>双味蝤蛑</STRONG> 蝤蛑是温州民间对当地青蟹的习惯称呼。肉质细嫩腴美，是蟹类中的活蝤蛑，以清蒸和干炒两种烹调技法组合而成，形态活泼、色彩艳丽，一菜双味、肉如膏脂、鲜美异常，辅以米醋佐食更佳。</P><P> <STRONG>鸡汁鱼唇</STRONG> 鱼唇是海鲜中之上品，亦称鱼头，是鲨鱼中犁头鲨的头的干制品。先水发鱼唇，经氽水、套汤多次去腥后，佐以老鸡汁烹制而成。此菜品质柔糯，汁浓味醇，营养丰富，为宴席大菜。 </P><P> <STRONG>炸蛏子筒</STRONG> 蛏子是温州海涂特产，蛏肉特鲜嫩。先将蛏子剥壳，用鸡蛋煎皮将蛏肉和姜葱一起卷包成圆柱形，然后挂糊油炸，以辣酱油蘸食，吃起来特别鲜美。 </P><P> <STRONG>桔络鱼脑</STRONG>
