大同刀削面多有名,我不知道.煤,很有名,走的很远.刀削面随着煤是否也走远了?<BR> 像煤一样,刀削面在大同,遍地都是,是个大排档.有人聚居的地方,就有刀削面馆,并不夸张.有时在小巷子里,七拐八转,总能找到一家,一口大锅,三五张方桌,十几个条凳,一看就是刀削面馆,何况还有很远就闻得见的喷香的臊子味.<BR> 刀削面我吃了三十多年,始终没有吃草.甚至还有点瘾,几天不吃就想.八岁那年,第一回进城,第一回吃刀削面.在东关露天的一块空地,架着一口大锅,锅下是红通通的炭火,锅里是大半锅沸腾的汤水,围着锅口站着四个后生,赤裸着上身,下身穿着半腿裤,赤脚蹬着懒汉鞋,肉嘟嘟的手臂上放着一块木板,板上是雪白的面块,长方条型,足有十几斤重吧.每人手握一把闪光的菜刀,前后飞舞,削葫芦似地削着面块.银鱼一样的面条飞舞着,落入滚沸的锅里,上下翻腾,仿佛千百条银鱼,在欢快地戏水.面条三面带棱,齐齐一筷子长短,精滑爽口.只见刀舞面飞,节奏和谐,没有精湛的技艺和功力是不行的.北方彪悍豪气的民风可见一斑.削面八成熟时,用罩笼一捞一摇,盛在大海碗里,浇上喷香红润的肉臊子,拌上香菜,加上味精,醋,辣椒油,就着腌的酸脆的圆白菜,吃的汗爬流水,相当入阁.坐在长条凳上,喝着面汤,看着路边来来往往的行人,的确满足着呢.<BR> 后来参加了工作,除了出差,几乎每天要吃一碗刀削面.早餐不吃,晚饭必吃.吃的多了,也渐渐品出刀削面的好歹,面馆虽多,正宗的却没几家.按地域分,共有三家,东关刀削面,七中刀削面,小南街刀削面,三家三个特色,各具千秋.开始时,三家的削面分别不大,虽然也有各自的和面方醒面法,主要是臊子的区别.小南街刀削面用纯骨肉熬臊子,去骨的肉切成指度大的方块,红多白少,肥而不腻,骨汤臊子原汁原味.东街刀削面和七中刀削面,都用精肉磨碎熬成臊子,红润的小肉球,红润的肉汤,不肥不瘦,喷香欲滴,别具风味.熬臊子的绝妙固然在选料配方,但更高的技术含量恐怕还在火侯,大同的炭火熬大同风味的臊子.他们两家的区别主要在面外所加的东西不同,七中刀削面除了肉釜鸡蛋,肉丸子,豆腐干外,还有红烧肉条,红烧豆腐片,红烧鸡腿,似乎更上档次,和小南街刀削面一样,经营场馆大多在房子里.<BR> 近年,刀削面馆愈开愈多,大多在牌子上加上''正宗''二字,将正宗做滥了.且都改用又薄又小的方形白铁片削面了,削出的面虽然薄了,细了,但也失去了面棱的精爽,吃不出原先的特色了.也许是被南来北往的人同化了,大同人的豪放愈来愈少,更不要说刀削面了.不过常吃面的人,还是能在众多的牌子中,找出几家正宗的刀削面馆,开着车专门去吃正宗的.正宗的削面馆很火,非正宗的地摊也不冷清,想图碗大便宜的民工,自然选择了非正宗的,花上两块钱,一大碗刀削面,一大碗腌圆白菜,吃的汗爬流水,吃个肚圆,也就满足了.<BR> 近年,虽然也有人在刀削面上做文章,有了赵家,李家刀削面,但始终不得其法,恐怕是舍本求末吧.大同刀削面不像大同老火锅,大同稍麦是官家名吃,连西太后老佛爷吃了都叫好呢.刀削面有点像狗肉,虽香却上不了席面.而且真正技术精湛的老师傅,大概都作古了,即便活着,也挥不起大刀削面了,后来的年轻人觉得没有那个必要了.<BR>
