喀什的大街小巷到处都有卖烤羊肉串的，淡蓝色的烟雾映着烤肉的香味四处飘散，一块块杏干大小的肉块同鸡蛋拌匀后被串起来，再撒上盐、孜然和辣椒粉，然后放在铁皮烤肉炉上，在炽热炭火的烘烤下，羊肉串会逐渐变得焦黄油亮，外酥里嫩，肉质鲜美，别具风味。</P><P> 喀什的凉粉也是别具一格，晶莹洁白的凉粉和细如发丝的萝卜拌在一起，再调上辣椒油、醋、蒜泥、盐等调料，酸辣适中、清香爽口，令人回味无穷。此外，馕坑烤肉是到喀什后绝不能错过的，它外脆里嫩，味美可口，用“到了喀什不吃馕坑肉只能算白跑一趟”来形容一点也不夸张。</P><P><STRONG>灌面肺和灌米肠 <BR></STRONG>
