<P>　　韶关各县均有生产，而始兴的香菇是“北菇”的代表，具有柄短，肉厚，香嫩，爽滑的特点，是传统的出口产品。香菇营养丰富，含有人体必须的7种氨基酸，有降血压，减胆固醇，预防肝病以及对胃癌的辅助治疗等作用。 </P><P>　　冬笋、笋干 </P><P>　　主要产于仁化、始兴、翁源、乳源等县。冬笋个大肉厚，甜滑爽脆，可用作佐料配菜，亦可作主菜烹调。用冬笋熏制成的笋干即玉兰片，配肉菜炒食，爽脆鲜香，与冬笋有异曲同工之妙。 </P><P>　　白毛茶 </P><P>　　白毛茶是中国特种名茶之一。乐昌、仁化等县的白毛茶已其特有的清香、甘醇、生津解渴、醒脑提神、消食开胃、除腻去渍和防治疴呕吐、预防龋齿、驱除口臭、降低血压等多种功能而著称。常饮可健身益寿。 </P><P>　　“白毛尖”茶是茶叶中的珍品，它因茶芽粗壮，密披银色毫毛而得名。经加工的茶芽毫毛银白如雪，茶汤清澈持久。据蒸青样生化测定，茶多酚42.84%、氨基酸1.47%、干茶样分析，茶多酚38.31%、咖啡碱5.5%、水浸出物45.03%。 </P><P>　　我市的仁化、乐昌是“白毛尖茶”的主要产地。 </P><P>　　乐昌马蹄 </P><P>　　乐昌马蹄已其个头大、皮薄肉嫩、水分充足、清甜无渣、爽脆可口而著称。它具有清热消渴、治脾热、温中益气、开胃下食、消肿解毒等功能。 </P><P>　　南华李 </P><P>　　南华李，是曲江县著名水果，肉质爽脆，清甜可口，多汁无渣。 </P><P>　　三华李 </P><P>　　三华李产于翁源县三华乡，品种很多，以鸡麻李和蜜李风味最佳。它的特点是果大、肉厚、无渣、核小、清甜爽口、有香味。每年6月下旬定为“中国翁源三华李节”。 </P><P>　　三华李是翁源县著名的土特产品。1987年被评为广东省十大优稀水果之一，有大红色，具有特殊香味，肉爽清甜、驰名省内和港澳。三华李在芒种、夏至成熟、是城市度淡水果。 </P><P>　　甘木通 </P><P>　　甘木通是生长在粤北山区的一种野生药用植物。经临床试验证明，甘木通用于治疗高血压冠心病有显著效果，并且有用量少，药效长、无副作用等优点，是一种有商品性生产前途的药用植物。 </P><P>　　乐昌、乳源的大瑶山已将甘木通变野生为家种。 </P><P>　　龙脑 </P><P>　　龙脑，又名梅片，是名贵的香料和中药。其中的右旋龙脑是许多贵重的中成药如“云南白药”、“六神丸”、“喉风散”等的重要成分。 </P><P>　　粤北山区有能产天然右旋龙脑的梅片树。 </P><P>　　巴戟天 </P><P>　　巴戟天是广东有名的地道药材，国内外享有声誉。翁源、始兴等地均有野生分布。 </P><P>　　大鲵 </P><P>　　大鲵，通俗称“蛙蛙鱼”，因会发声，故名。它生长于少受污染的山涧溪流之间，在乐昌、乳源、等县有分布。 </P><P>　　棘胸蛙 </P><P>　　棘胸蛙、当地称为“石蛤”。其肉质鲜美，是深受欢迎的食物，市场上供不应求。 </P><P>　　马坝油粘米 </P><P>　　马坝油粘米是曲江县传统的优质水稻品种。以其米粒细小、质地硬韧、晶莹透明、油脂量高而著称，一直是中国出口大米中的主要品种之一。 </P><P>　　马坝油粘米是曲江县的名优特产，在封建社会曾作为“贡米”，它米粒细长，晶莹洁白，香滑软熟，饭后齿颊留香。 </P><P>　　黄烟 </P><P>　　南雄黄烟是以色泽金黄，味道清香的特点而闻名于世，曾远销30多个国家和地区。1984年以来，开始引种美国浓香型G28香烟，至今发展到几十万，烟叶保持原种风味质量上乘。 </P><P>　　南雄、始兴两县生产的黄烟叶具有易燃、灰白、色泽金黄、烟味醇香、尼古丁含量较少等特点，闻名海外。 </P><P>　　猕猴桃 </P><P>　　李时珍在《本草纲目》中记述猕猴桃：其形如梨，其色如桃，而猕猴喜食，故有诸名。猕猴桃果肉细软，多汁，果味清香，酸甜可口，营养丰富，每一克鲜果含维生素200——400毫克，比<SPAN class=yqlink> 苹果</SPAN>，梨，柑桔等水果的含量高十几倍。还含有大量维生素B、葡萄糖、各种氨基酸、碳水化合物以及稀有的解朊酶等成分。
