face=宋体>徽菜为中国主要菜系之一。多用山珍野味水鲜，重油重色，味道醇厚，尤以烹制鲜鱼有独到之处，这与安徽有马蹄、果子狸、三河麻鸭、肥王鱼、山鸡等特产，当地人长年饮茶等有直接关系。其烟熏技术别具一格。符离集烧鸡、雪冬烧山鸡、火腿炖甲鱼、红烧果子狸等为名菜。安庆的豆腐、寿县的“大救驾”糕、阜阳的婆婆馍都各具特色。</FONT></P> <P><FONT face=宋体>阜阳曾经有那么多好吃的小吃，古楼广场的空气里都曾弥漫着沁人肠胃的香气。风味小吃的配方往往来自某个师傅的偶然触动，一旦形成食物，将使无数人的胃口打开。</FONT></P> <P><FONT face=宋体>具有特色的阜阳小吃有很多，比如：连老大坛子肉，用小沙锅做容器，腊菜炖红烧肉，配米饭，肉浓香略带腊味。</FONT></P> <P><FONT face=宋体>陈怪咕卤肉，鲜肉在盐水里泡，加上十二味中草药的特殊工艺，肉味香头足，有鲜有嫩，每天只售二十斤。</FONT></P> <P><FONT face=宋体>老温面条，老温的面条功夫在汤，号称百年老汤，每天煮两只鸡，加一点肉，放入那个经年不清理的汤锅里，面条里点缀着鸡丝，少许肉块。</FONT></P> <P><FONT
