承德一带动植物资源十分丰富，为这里形成独具特色的地方饮食文化和传统风味提供了有利条件。从清中期前的几代皇帝清宫档案热河膳食单上看，其膳食原料多出自当地的动植物；滦河、五烈河两岸的稻、玉米、各类谷子、高粱、大豆、荞麦、莜麦等杂粮为承德的如杏仁茶、面茶、茶汤、碗坨、煎糕、片粉、豆糕等各民族风味小吃提供了丰富多样的原料。 </P><P>至今，较具代表的名吃有：肉制品类传统名吃“熏窜山龙”（野兔，古代称之为“窜山龙”）、“承德酱驴肉、烤野鸭”等。 </P><P>米面制品类传统名吃：满把烧麦、马家烧麦、麒麟蒸饺、焦炒面、软炒面、油酥饽饽、丝糕、驼油丝饼、口袋饼、哈达饼、荷叶饼、缸炉圈、八宝白藕饭、龙戏珠饭、馓布萨； </P><P>荞面制品二 仙居碗坨、拨御面、一百家子白荞面餄餎、清宫御膳银丝杂面、豆碴糕、豌豆糕”； 承德的传统食品，从其名称上不仅闻到了山野间蓝天下的草香，听到八旗围场哨鹿时的马蹄和喊杀声，领略了承德一带的风土人情，而且感受到了避暑山庄那浓郁的宫廷和书卷气息。这里的每一道菜肴都蕴涵着几个民间传说，几乎都有着它自己的来历，它们在这块奇特的土地上相互借鉴、相互影响，把各个民族的饮食文化融合在了一起。进入20世纪80年代以后，承德的多类食品参加了世界旅游博览会，有的获国优省优产品称号；许多名厨赴北京钓鱼台国宾馆和各地收徒传艺，还有的出国开餐馆，把承德的传统饮食文化传播到全世界。</DIV></div><div
