Thirty years ago Xavier founded <a href="https://www.booking.laverriere.com/welcome" rel=" noopener" target="_blank">La Verrière</a>, a previously abandoned Provencal Priory transformed into the home of the premium organic wine brand, Chêne Bleu.</p> <p>Xavier’s experience and enthusiasm for working with students have already been in action, as he’s been engaging in CBEY’s work in thriving food systems via our <a href="https://cbey.yale.edu/programs/regenerative-agriculture-lab">Regenerative Agriculture Lab</a> with Resident Fellow, <a href="https://cbey.yale.edu/our-community/tagan-engel">Tagan Engel</a>.
