he consumed there in sickening detail. I call it his foodographic memory. <br><br> I am not this way, though I do have a great memory for food I <i>don't</i> like.<br><br>At a friend's birthday party three years ago, for example, I enjoyed a lovely spread my friend cooked using recipes from Amanda Hesser, a renowned food critic at <i>The New York Times Magazine</i>. <br><br> I know it was a great dinner. And yet, I can only recall two dishes: tiny sandwiches made with jelly and goose-liver p芒t茅, and a roasted beet salad with onions. There are three: nontaster, average taster, and supertaster. About 50 percent of us are average tasters. The rest are divided among nontasters and supertasters. <br><br> Scientists categorize you by putting a piece of paper laced with 6-n-propylthiouracil (also known as PROP) on your tongue. PROP has no flavor for nontasters, is somewhat bitter to the average taster, and totally repugnant to supertasters. As the theory has it, being able to perceive bitterness was an evolutionary advantage that would let people figure out which plants were poisonous. Now, though, it mostly makes certain foods, like broccoli, repugnant to sensitive small children and <a href="/web/20081203044755/http://encarta.msn.com/encyclopedia_761571000/Bush_George_Herbert_Walker.html">certain former presidents</a>. <br><br> You can test your own ability to detect bitterness with blue food coloring, a magnifying glass, and a piece of paper with a quarter-inch hole in it. <br><br> (The test is a bit gross. You dye your tongue blue, rinse your mouth with water, then dry your tongue and use a magnifying glass to count the pink bumps-- called papillae--that stand out against your now-blue tongue. If you have fewer than 15 in that quarter-inch hole, you're a nontaster. If you have more than 35--which means your tongue won't be all that blue--you're a supertaster.) <br><br> The papillae are clusters of taste cells on the tongue we typically call "taste buds." But these aren't our only taste cells. We also have taste cells in our palate--the roof of the mouth--and throat.
