color: #333333; font-family: 宋体; line-height: 20px;"> <b></b></td> </tr> </table> <p> </p> <p style="text-indent:2em"> 近期，江苏科技大学、中国农业科学院蚕业研究所教授王俊团队通过研究，为药食两用昆虫资源在高附加值综合利用方面提供了新思路，其相关成果连续发表在农林科学1区TOP期刊《食品与功能》（<em>Food & Function</em>）上。</p> <p style="text-indent:2em"> 据悉，作为世界上利用昆虫资源历史最为悠久的国家，我国在有关蚕丝、蚕蛹等的应用方面最具特色。目前，我国每年蚕蛹产量占世界总量的80%，而蚕蛹的油脂含量可以达到30%。据报道，蚕蛹油含有约75%的不饱和脂肪酸和20%的饱和脂肪酸，其中α-亚麻酸含量约占35%，但人们对蚕蛹油的营养消化特性知之甚少。</p> <p style="text-indent:2em"> 王俊团队通过研究发现，蚕蛹油中的α-亚麻酸含量占总脂肪酸的32.60±0.67%，不但含量高且符合营养需求。团队成员测试了几种常见油脂的脂肪酸最大释放量，其排序为蚕蛹油>大豆油>猪油>桑籽油>亚麻籽油，说明蚕蛹油是易于消化的富含α-亚麻酸的优质天然油脂来源。这为今后蚕蛹油高附加值综合利用和新产品开发提供了理论支撑。</p> <p style="text-indent:2em"> 同时，研究团队在对蚕蛹油中甘油三酯脂肪酸组成进行分析时发现，蚕蛹油甘油三酯含有的棕榈酸在被人体食用后，可能会在肠胃消化阶段出现难溶的固形物，从而影响其消化吸收。</p> <p style="text-indent:2em"> 对此，作者选择用智能水凝胶构建了一种方便更换酶，同时不影响油脂流通性的微流场反应器。通过这一方法，一方面可以大幅减少不饱和脂肪酸在高温场中的停留时间（由数小时骤减至数秒钟），另一方面，通过降低棕榈酸的相对含量，显著提高了蚕蛹油的脂肪酸释放率，为绿色高效酶法修饰蚕蛹油提供了新的关键技术。</p> <p style="text-indent:2em"> 据了解，当前人们对于油脂的不合理摄入，是导致慢性心血管疾病患病风险增加的重要因素。而α-亚麻酸作为人体必需的n-3 多不饱和脂肪酸，在预防心血管疾病、提供神经保护、增强免疫力、保护视网膜和大脑发育等方面具有重要的生理作用。</p> <p style="text-indent:2em"> 传统上，植物油脂是α-亚麻酸的主要来源，但如大豆油、菜籽油和玉米油等油脂中的α-亚麻酸含量低于10%，远远达不到人体的需求量。而作为人们补充α-亚麻酸的主要脂质来源，亚麻籽油的消化程度和消化速率又远低于日常膳食油脂，因而限制了α-亚麻酸在人体内的吸收和利用。因此，从昆虫资源中寻求α-亚麻酸等不饱和脂肪酸资源将会是一种新颖的解决方案。（来源：中国科学报 陈彬）</p> <p style="text-indent:2em"> 相关论文信息：</p> <p style="text-indent:2em"> <a href="https://doi.org/10.1039/D0FO03469J" target="_blank">https://doi.org/10.1039/D0FO03469J</a></p> <div class="bq" style="text-indent:0em;font-weight:bold;font-size:13px;border:solid 1px #333 ;padding:10px;"> 版权声明：凡本网注明“来源：中国科学报、科学网、科学新闻杂志”的所有作品，网站转载，请在正文上方注明来源和作者，且不得对内容作实质性改动；微信公众号、头条号等新媒体平台，转载请联系授权。邮箱：shouquan@stimes.cn。</div> <div style="border-bottom: solid 1px #bfc89d;
