<p>农夫山泉又惹争议了，焦点仍是“水”。</p><p>近日，农夫山泉创始人钟睒睒在公开场合称，推出纯净水是“一气之下”做的决定，表示“仍然不希望大家去喝”，并建议“不要长期整个家庭饮用纯净水”。</p><p>11月22日，“员工称胖东来不卖农夫山泉绿瓶水”这一话题迅速攀升至微博热搜榜首，使得天然水与纯净水之间的争议进一步升温。</p><p>此时，最无奈的还是身处云里雾里的消费者：生产绿瓶水但不希望消费者饮用？消费者究竟应该喝什么水？</p><p class="time-article-subtitle">“纯净水”“天然水”，都是包装饮用水</p><p>所谓绿瓶水，是指农夫山泉推出的纯净水，而对应的红瓶水则是农夫山泉天然水。其中最大的区别就在于，农夫山泉宣传“天然水仅对原水做必要的处理，水中含有钾、钠、钙等各种矿物元素”，而纯净水则是经过多道深度净化工艺，将水中几乎所有杂质都去除，只保留纯粹的水分子。</p><p><span>目前，关于瓶装水，只有2个强制性国标：《食品安全国家标准 包装饮用水》（GB 19298-2014）、《食品安全国家标准 饮用天然矿泉水》（GB 8537-2018）。</span></p><p>实际上，按照《食品安全国家标准 包装饮用水》（GB 19298-2014）的分类，<span>绿瓶水</span>（纯净水）为“饮用纯净水”，<span>红瓶水</span>（天然水）为“其他饮用水”，其实<span>都属于“包装饮用水”。</span></p><p><span>纯净水</span>的水源可以是自来水、地表水（如江河、湖泊水）或地下水等。不管最初的水源是什么，都要经过<span>复杂的处理工艺</span>，去除水中几乎所有的杂质<span>（无差别去除有益元素和有害杂质）</span>，最终得到几乎纯粹的H2O。</p><p><span>其他饮用水</span>一般包括<span>矿物质水、饮用天然泉水、饮用天然水。</span>对比纯净水，它们的源水通常不是自来水，共通性在于“<span>有限加工</span>”，因此可以保留部分于健康有益的微量元素。</p><p>有人对纯净水嗤之以鼻，认为市售纯净水都是以“自来水”作为唯一源水，但事实上，类似江河、湖泊水、山泉水等<span>自然水源也能作为纯净水的源水，只是考虑到成本问题，很多品牌通常不会采用这种吃力不讨好的做法。</span></p><p>对比两者在标准要求上的不同，我们可以看到，基于<span>纯净水</span>“纯”这一特性，其在色度要求上更严格，即<span>感官上要求更纯净</span>；如果是<span>以地表水或地下水为生产用源水加工</span>的包装饮用水，对阴离子合成洗涤剂、总α放射性、总β放射性有所要求，因为<span>这些源水更容易受到生活</span><span>污水、工业废水等的污染</span>。除此之外，其他指标要求几乎一致。</p><p><br></p><p </p><p><br></p><p>本刊认为，与其围绕“纯净水”“天然水”做文章，不如将目光投向与两者有着云泥之别的“天然矿泉水”。</p><p>本刊对比了包装饮用水和天然矿泉水的国标，先不讨论两者“出身（水源地）”的不同，从限量指标的数量来看，<span>天然矿泉水指标总数量为40项，包装饮用水指标总数量为22项</span>，近乎腰斩。</p><p><br></p><p </p><p><br></p><p>分析具体指标，我们可以看出包装饮用水对游离氯、四氯化碳、三氯甲烷有限量要求，天然矿泉水则没有，那是因为<span>包装饮用水在生产过程中，部分水源会采用氯气或含氯消毒剂进行消毒处理，而天然矿泉水是从地下深处自然涌出的或经人工钻井采集的未受污染的水，一般不采用氯气等含氯消毒剂进行消毒。</span></p><p>从表格中可以直观看到，包装饮用水没有界限指标，而天然矿泉水有7项，这其实是两者的关键区别。<span>界限指标体现了天然矿泉水成分的天然性和独特性</span>，许多在界限指标范围内的成分被认为对人体健康有益。例如，当天然矿泉水含有适量的硒并且符合界限指标时，消费者可以合理地预期这种水可能会对健康产生积极的影响。</p><p>本刊建议，<span>消费者购买时认准执行标准及产品类型即可</span>。毕竟如何放大天然水中的“矿物元素”的卖点，也不过是碰瓷“天然矿泉水”。</p><p class="time-article-subtitle">无论什么“水”，借此补充矿物质都不现实</p><p>本次舆论的焦点，还在于长期饮用纯净水不利健康的论调。</p><p>正如前文所述，纯净水主打一个“纯”字，被诟病的地方是几乎不含有矿物质，而天然水因为加工程度有限，可保留部分有益的矿物元素。</p><p><span>单纯以“矿物质有无”来谈论水的好坏，本刊认为这是一个伪命题。</span></p><p>首先，天然水确实含有一定量的微量元素，但是<span>与食物相比，水中的矿物质含量非常有限</span>。例如，菠菜是富含铁的蔬菜，100g菠菜中的含铁量可达2.9mg左右，而1L普通饮用水中的铁含量通常可以忽略不计。即使是矿物质含量相对较高的矿泉水，其矿物质浓度也远远低于食物中的含量。</p><p>而且，不同品牌的矿泉水或者其他饮用水，矿物质的种类和含量因水源不同而差异很大，<span>很难保证通过饮用水来精准地补充人体所需的各种矿物质。</span></p><p>此外，人体对食物中矿物质的吸收是一个复杂的过程，受到食物的种类、人体的胃肠功能等多种因素的影响。相比之下，人体对水中矿物质的吸收效率研究尚不充分，<span>目前没有足够的证据表明人体能够高效地利用水中的矿物质来满足自身的需求。</span></p><p>实际上，<span>人体获取矿物质的主要途径是食物</span>，正常的饮食能够为人体提供足够的钙、镁、钾等矿物质。从这个角度讲，即使长期饮用纯净水，只要饮食均衡，人体一般不会出现矿物质缺乏的情况。所以，<span>从水中补充矿物质不过是杯水车薪，既不实用也不现实，依靠食物来补充矿物质才是更可靠、更主要的方式。</span></p>
