src="https://p1.cncnimg.cn/f/7/info_4436_0.gif"></CENTER><P><BR><BR>    天长市内有悠久的制作历史，为名细糕点之一。铜城大糕尤称佳品，薄如白纸，点火可着，卷如香烟，不断不裂。其制作过程是：选上好纯白糯米淘尽，然后炒熟磨成粉。炒米时要先以文火烧透心，粉成后装入缸中，中间放青菜叶以吸收火气，两月后取出制作时须严格配料，一般米粉、白糖、猪油和水的比例为5：4：0.5：0.5。炖糕要文火。糕成后切糕时刀工要精细，刀刀到底。   </P><P><TABLE cellSpacing=0 cellPadding=12 width="95%" bgColor=#f0f0f0 border=0><TBODY><TR><TD class=t14l14b align=middle colSpan=2>全椒马厂酥笏牌<BR><BR></TD></TR><TR><TD vAlign=top colSpan=2><DIV align=center><P></P></DIV><DIV style="LINE-HEIGHT: 140%" align=left>  　酥笏牌是全椒名点之一，以马厂镇最为可口。因其形状象古代大臣上朝时用的象牙笏牌，故有此名。酥香味美，为品茗佳品，又是馈赠亲友的上等礼品。尤为适宜老年人食用。为明乐韶凤所创。主料为面粉，鹅油或鸭油、熟芝麻。将油酥和面团揉和，反复折叠，擀成24层，形成 长约16厘米，宽约6厘米的底坯，撒上芝麻入炉以文火闷透。取出后清除炭火，再层层放入炉内，利用炉内余热，熏烤过夜即可，启炉香气扑鼻，放入茶盘，以手指在两头一按，即碎为八块。食之有益于胃寒、食欲不振、体虚、盗汗等症。<BR><BR>    相传大明开国功臣、兵部尚书全椒人乐韶凤与朱元璋君臣相洽。一日朱邀乐游金水桥，朱携乐手，突然说：“携手上金桥，有事不相饶。”乐跪下答道：“平生仗忠义，不畏帝王刀。”事后乐感到畏惧。一日朱元璋驾临乐府，乐即奉上自家制作的酥笏牌请君品尝。朱元璋拿起酥笏牌笑道：卿家心思精巧，造此笏牌，定有所奏。乐即答愿交出所掌之权，回乡告老，并口吟辞朝诗两首。帝准其所请。故乐韶凤得以善终，卒葬故乡（见明清两代县志）。酥笏牌制作也从乐府流传全椒，并以马厂镇得以保持当年秘传。上世纪五十年代，马厂镇酥笏牌传人曾为毛主席祝寿，制作酥笏牌寄到北京，受到中办复函称赞</DIV></TD></TR></TBODY></TABLE><TABLE align=left><BR><BR>    起源于明朝末年，以麦面、芝麻、糖为基本原料，焙炒加工而成，故通称面糖。清代，有秦、尤两位师傅，将面糖用糯米汁作包衣，称："秦尤酥糖"，后来，一位姓董的师傅，在原来的基础上把糯米汁多层与面糖折叠，故又称"董糖"。1956年滁县食品厂采百家之长，用纯白麻仁、白糖粉、富强粉、麦芽糖等为原料，几经研制，借滁州名胜风景而取名"琅琊酥糖"。1959年正式投产，1980年被评为安徽省名细糕点，1984年被评为省优质产品。琅琊酥糖厚薄均匀，骨薄如纸，剖面层次清晰，呈螺丝体，色泽浮白，入口酥软，细腻而无杂质，营养丰富，老少咸宜，是馈赠新友之佳品。</DIV></TD></TR></TBODY></TABLE><TABLE align=left><BR><BR>    滁菊，素有“金心玉瓣，翠蒂天香”之美誉。因栽培历史悠久，品质优良，驰名全国，被誉为全国四大白菊之首。清光绪年间接列为贡品，故又称“滁贡菊”。滁菊是重要的中药材，其味甘，性微寒，《现代实用中药》一书评价“安徽滁州产者最清凉，不苦不甜，白菊中以此为最良”。用来泡茶，具有很好的保健效果。长期饮用，具有疏风散热，明目平肝解毒之功效，并对头痛眩晕，血压亢进，神经性头痛等有很好的治疗作用。滁菊系列保健饮品以精选的滁菊为主要原料，现已研制和开发出滁菊醉翁茶、滁菊贡茶、滁菊红宝茶、滁菊清凉茶等十几个系列产品，十分畅销。</DIV></TD></TR></TBODY></TABLE><TABLE align=left>  　相传张果老在女山仙人洞小憩时被一群白羊吵吵闹闹，搅了好觉，气得将这群白羊点化成石。雪白的羊毛没有变成石头，脱落后被风吹雨淋流入女山湖。时间一长，长成了一种细细长长的小鱼。开始数量很少，渔民们也没在意。后来繁衍的越来越多，成群结队，在阳光的照射下闪着光亮，银白一片，女山湖成了银色的湖；后来有人捕了些用它做汤，汤味特别鱼美，鱼肉细嫩无刺，食之回味无穷。因这小鱼银白无鳞，被人叫作"银鱼"。<BR><BR>    女山湖所产银鱼，属鱼中上品。消息传开，捕捞的人也渐渐多了起来。先是自家食用，后知道的人多了，城里的人也开始食用，所以鱼市就有买卖的了。随着买的人越来越多，鱼价也就越来越高。一日，县太爷把这种鱼推荐给知府，知府吃后觉得很有特色，口味甚佳，于是令人每日捕捞送上。后知府为讨好宫中高官，挑选出一批长短均一寸左右的精品献入宫中，经御厨精心煮成银鱼羹让皇上品尝，皇上一连晚了两碗，连称"鲜！美！"。从那以后，女山银鱼便成了贡品。据说比太湖银鱼和巢湖银鱼还早上百年。<BR><BR>    女山湖银鱼个小体肥，肉质鲜嫩，营养丰富。其干制品“银鱼干”，是一种高蛋白营养食品。其产品洁白如银，无杂色，规格整齐，可用来制作多种美味佳肴，在国内外市场十分畅销。</DIV></TD></TR></TBODY></TABLE></P></div><div
