安多藏族人家每日3～4餐,有奶茶、油条、糌粑,还有酸奶、肉饺、肉包、面条和手抓羊肉 等,调剂花样甚多,以肉食为主。 <BR> 奶茶是安多藏族生活中不可缺少的饮料;它的制法很简单,即把茶叶放入壶内或锅里,添水 加盐煮沸,待茶色变浓加入牛奶,再烧开即成。奶茶可止渴、消食、解除疲劳。?? <BR> 糌粑是安多藏族的主食。它是将炒熟的青稞用手磨加工成面粉,吃时加上酥油、干奶酪和茶 水,在碗里用手拌匀,捏成团状食品。糌粑易于保存,便于携带,吃法简单,味香耐饥。不 管走到什么地方,只要有水就可以吃上喷香可口的糌粑了。?? <BR> “都玛”茶,相当于甘南藏族的早点。它的吃法是先在碗里放上少量炒面、干奶酪和酥油 ,再倒上茶水。茶水喝完后,将炒面用手指搅着吃。走进帐房,不论生人熟客,热情的主妇 总会向你先敬一碗“都玛”茶。牧区藏族除了象农业区一样吃面条、油饼和包子外,还吃“ 谢特”。其做法是把面擀成薄饼煮熟,捞起后趁热加酥油、干奶酪、红糖,拌匀后即成。它 甜香可口,是牧区常见的待客食品。?? <BR> 手抓肉是藏族比较高级的食品。藏族人民杀牛宰羊,第一顿要吃胸叉肉和血肠、肉肠、肝肠 和面肠。血肠的制法是;把切碎的肉丁、脂肪、调料和血拌匀后灌进小肠,放到开水锅里一 涮两滚。不等肠内的血完全凝固就捞出,捏住两端边吃边吮,味道鲜美。吃血肠有益气补血 的功效,妇女产后一般要宰杀羯羊,吃新鲜肉和血肠,以滋补身体。肉肠也叫油肠,用羊大 肠制做。在切细的碎肉丁里加上调料,从带油大肠的细段往粗段边装边翻,装完后以慢火炖 熟。面肠是用切碎的羊油放入搅拌成糊状并加有调料的面粉里灌制而成。除煮食外,还可将 煮熟的面肠切成段,在火上烤着吃。肝肠灌的是羊的肝脏碎丁,再加适量的羊油和调料煮熟 。鲜美脆嫩,吃肝肠能使智力敏锐。初冬,正是牛羊膘肥体壮的时候,家家都宰牛杀羊,储 存冬肉。冷冻储存的方法之一,是采用“吾吉”法。即把羊宰杀后,不剥皮,剖开腹腔将下 水取出拾掇干净,待凉透后用羊肚包好,再装回整腔羊体内缝合,让它自然冷冻起来。它便 于储存和驮运,可以随时取食,肉味和新宰羊肉相比并不逊色。甘南藏族主要吃牛羊肉,偶 尔也吃猎获的野味。吃的方法通常是煮“手抓”。 <BR> “手抓”肉熟而不烂,鲜嫩可口,吃时一手持刀,一手抓肉。所以叫手抓。 <BR> 酸奶是夏秋两季的日常饮料。其做法是,将新鲜牛奶煮沸,倒在容器中,待牛奶不烫手 时加入酸奶酵母搅匀,放在温度适宜的地方,几小时以后,牛奶凝固成嫩豆腐状,即成酸奶 。饮用酸奶有镇静、催眠、开胃、补气的作用。?? <BR>酥油是从牛奶中分离出来的奶油,营养价值很高。牧区吃糌粑、“都玛”都离不开它。过去 提取酥油由于工具简陋,完全用手工操作,不但劳动强度极大,也不卫生。现在牧区已逐步 用上了奶油分离器,劳动强度已大大减轻。牛奶提取酥油后的液体叫“达拉”,可以用来制 干奶酪,也可饮用。?? <BR> 蕨麻是藏族人民喜欢吃的食品。每到秋末,人们去挖蕨麻,晒干后储存。比较普遍的吃 法是将大米和蕨麻熬成粥,并加糖和酥油,称“蕨哲”。只把蕨麻煮熟,加糖和酥油液,也
