(Amy Drew Thompson/Orlando Sentinel)</figcaption></figure><p>Oftentimes, when I ring a restaurant to connect with an owner, chef or general manager, weary staffers, used to having their days interrupted by sales calls, will assume that I, too, have such motivations.</p><p>“The owner isn’t here,” they tell me. “The manager is on vacation.”</p><p>And so I penned my piece about Walala, and its sister restaurant next door, Chili Star, without input. I filed it to drop in Thursday’s print edition. I shrugged my shoulders and went to work on what you’re reading here.</p><p>“I am so sorry!” Yan told me. I had finally been able to reach her via a mutual connection.</p><p>I, too, was sorry. (Amy Drew Thompson/Orlando Sentinel)</figcaption></figure><p>“It was very authentic Chinese food,” she says. “And people who are Chinese or have spent a significant amount of time in China, they love it. But the … food doesn’t really match with American tastebuds.”</p><p>With a smaller Chinese population than in cities like New York or Los Angeles and stiff competition from other Sichuan venues, she ventures, it was hard to reach the Chinese and American palates looking for what Chili Star served.</p><p>Walala, with its far more recognizable fare (“Everyone loves noodles,” Yan says), didn’t get lost in translation.</p><p>“It has become really popular,” she says, “so my dad and I decided to fully dedicate ourselves to that side of the business.”</p><figure id="attachment_14209109" class="wp-caption aligncenter size-article_inline"><img decoding="async" class=" lazyautosizes lazyload" src="https://i0.wp.com/www.orlandosentinel.com/wp-content/uploads/2024/11/TOS-L-review-chili-star-walala-asian-noodle-house-07_f0f597.jpg?fit=620%2C9999px&ssl=1" alt="How tight are your chopstick skills? By the time we left, though, there was a small group of folks waiting for their turn at the noodle trough.</p><p>Walala is bright. A sun-yellow room with closer-packed tables. Though full-service, it has a fast-casual feel.</p><p>Very fast.</p><p>Dishes come out as they are ready, which means they’re hot and fresh, so you might consider giving your dining partners, as I did, permission to dig in before your plate arrives. Gorgeous, hand-pulled Lanzhou noodles with that brilliant chew and buttery feel.</p><p>Flat, silky, hor fun, which can be a bit slippery in broth-based dishes, might test your chopsticking skills, but suffer none for it. In fact, I’d take the glass-half-full view: you’ll eat slower. And probably less.</p><p>That said, we all joked about my secret recipe ground beef dry noodles ($16.98), a formidable bowl that seemed to stay full no matter how much I ate.</p><p>Topped with carrot, zucchini and fried peanuts, along with a mild, umami-laden chili oil, the ground beef here is tangy and dry, sitting somewhere between stewed beef and jerky, with concentrated flavors and sweetness. Marvelous texture. And visually beautiful.</p><p>So, if you can’t get a counter seat to watch the noodle-pulling action in the kitchen (so fun!), enjoy, as we did, gazing into one another’s bowls.</p><p>Like spicy sliced beef shank rice noodles ($16.98), spicy tonkotsu ramen with secret recipe pork chashu ($16.98) and hand-shredded chicken hor fun ($16.98), each plated for the eyes and poised for joyful destruction.</p><p>Highlights here were the light broth in the chicken dish, which was gentle and flavorful in contrast to the nice soup of the beef shank dish. The tonkotsu had heat and was tasty — but different, a far lighter take than expected. Less weight. Less umami. But neither stopped my dining companion from being the only one at the table to see the bottom of his bowl.</p><p>Coincidence?</p><p>No, says Yan. In fact, the broths for all the soups have the same beef-chicken foundation. Long simmered with meat and bones, steadily, painstakingly clarified, it is the sauces for items such as the beef shank or braised honeycomb or secret recipe pork chashu that flavors each bowl so extensively.</p><p>If my own brothless bowl seemed perpetually full, the dumpling combo ($13.98) nearly disappeared before I could sample it.</p><p>Three boiled varieties (pork/cabbage, beef/celery, chicken/shiitake) look the same on their toothy outsides, but within, a contained small slurp of broth keeps fillings moist, wonderful, small bites of love as the heart-shaped chili oil ramekin would indicate.</p><p>I am sad I cannot send you next door, where fiery tripe and sizzling lamb and mouth-numbing saliva chicken tempted on our visit (for these and other delights like them, you can visit Spicy Girl, Chuan Fu, Yummy Taste or Taste of Chengdu – these are scattered around the city, choose the one most convenient).</p><p>But I’m happy to be able to point you in the direction of Walala, where noodity (in particular if you get that counter seat) is both full and frontal.</p><p><i>Find me on Facebook, TikTok, Twitter or Instagram </i><a href="https://www.instagram.com/amydroo/" data-mrf-link="https://www.instagram.com/amydroo/"><i>@amydroo</i></a><i> or on the OSFoodie Instagram account </i><a href="https://www.instagram.com/orlando.foodie/" data-mrf-link="https://www.instagram.com/orlando.foodie/"><i>@orlando.foodie</i></a><i>.
