Chemical Composition of Variety &039;Nante&039; Hybrid Carrots Cultivated in Latvia

The major objective of current research was to evaluate the chemical composition of carrot variety &amp;039;Nante&amp;039; hybrids in general and to select the best samples for freshcut salad production. The research was accomplished on fresh in Latvia cultivated carrots harvested in Zemgale region in the first part of October, 2011 and immediately used for experiments. Latebearing variety &amp;039;Nante&amp;039; hybrid carrots were used for analysis &amp;039;NanteBerlikum&amp;039;, &amp;039;NanteMaestro&amp;039;, &amp;039;NanteForto&amp;039;, &amp;039;NanteBolero&amp;039; and &amp;039;NanteChampion&amp;039;. The quality parameters as moisture, soluble solid, firmness, bcarotene, carotenoid, color, polyphenols, total phenolic compounds and total antioxidant capacity were analyzed using standard methods. For freshcut salad production as more applicable could be recommended hybrids &amp;039;NanteForto&amp;039; and &amp;039;NanteBerlikum&amp;039; mainly because its higher nutritive value, as higher total phenolic compounds, polyphenols and pronounced antioxidant capacity.</abstract> <index>Open Science Index 64, 2012</index> </article>
