Writing in <i><a href="/wiki/Bon_App%C3%A9tit" title="Bon Appétit">Bon Appétit</a></i>, the Italian-American chef <a href="/wiki/Carla_Lalli_Music" title="Carla Lalli Music">Carla Lalli Music</a> notes that "American cooks added heavy cream or <a href="/wiki/Half_and_half#Dairy_product" title="Half and half">half-and-half</a> to thicken and enrich the sauce.
