洛阳的饮食历史悠久，品种繁多。既有出自宫廷、有“金枝玉叶”之称的洛阳燕菜，也有在民间广受欢迎的鲤鱼跃龙门，既有历史长达1900多年的长寿鱼，也有近年才兴起的张记烧鸡。洛阳人喜爱喝汤，洛阳饮食的一个显著特点就是汤水多，各色各样的汤成为洛阳街头最平常的风味小吃，如不翻汤、胡辣汤、牛肉汤等。</P><P>    洛阳的餐饮中，最具特色的当属洛阳水席。从菜肴搭配，到上菜次序，都有特殊而严格的规定。人们在大饱口福的同时，也大饱了眼福。</P><P><A name=2><STRONG>长寿鱼</STRONG></A></P><P>长寿鱼，是具有药用价值的一道菜。其特点是味鲜，甜咸酸三味俱全，已有1900多年的历史。相传，东汉光武帝刘秀一年春天外出游猎，过邙山，来到黄河之滨。故地重游，神气清爽。突然一条赤色鲤鱼，跃出水面，在阳光下，金光耀眼。刘秀大喜，遂命人捉回宫去，御厨别出新裁，与枸杞子同烧，名曰长寿鱼。刘秀食后，顿觉精神倍加，疲倦消失，常食之，身体却健康起来。尔后，传入民间，成为洛阳的一道名菜。</P><P><A name=3><STRONG>清蒸鲂鱼</STRONG></A></P><P>鲂鱼产于伊水，故有"伊鲂"之说。以其制作简单，香淡味纯而闻名。汉唐时期常以此鱼招待贵宾。相传，唐代大诗人白居易和"九老会"的诗人们，在饮酒赋诗时，常食此鱼。</P><P><A name=4><STRONG>鲤鱼跃龙门</STRONG></A></P><P>鲤鱼为黄河名鱼，自古就有"洛鲤伊鲂，贵似牛羊"之说。肉嫩味美，营养丰富，闻名中外。鲤鱼跳龙门，造型优美，寓意吉祥。只见烹制好的鲤鱼，昂首盘中，栩栩如生，仿佛欲跃而起。加之有青山衬托、状如门阙，颇富山野情趣。食之味美无穷。</P><P><A name=5><STRONG>洛阳燕菜</STRONG></A></P><P>洛阳燕菜，是洛阳独具风格的风味菜。相传，武则天居洛阳时，东关一块菜地里，长出一个几十斤的大萝卜，菜农认为是神奇之物，献给女皇武则天，御厨师把它切成丝、拌粉清蒸，配以鲜味汤汁，女皇吃后，其味异常鲜美，大有燕窝风味，赞不绝口，赐名"燕菜"。后传入民间，日久天长，大家都叫做"洛阳燕菜"，流传至今。1973年10月，周恩来总理陪加拿大总理特鲁多来洛阳参观，著名厨师王长生、李大雄精心制作燕菜，招待二位总理。总理一连要了两道，食后同声称赞。因菜中雕有牡丹花，故周总理风趣地称为"牡丹燕菜"。从此，洛阳的"牡丹燕菜"誉满中外。</P></div><div
