傣家菜的特点是酸、甜、苦、辣、生。酸为菜味之冠，菜肴有酸扒菜、酸腌菜、酸腌鱼、酸笋煮鸡、酸木鬼煮牛肉等；甜品有西瓜、香瓜、菠菜、芒果；辣的食品有红小米辣、灯笼辣、象鼻辣等；生的食品有生猪肉、生牛肉、生鱼、生鹿肉、生蚂蚁蛋等。</P><P>　　景颇族菜的主旋律是“清淡、辣、酸、苦、香”，菜肴中，以“舂菜”最富特色。景颇族喜欢把野菜、野果舂后做菜，既可以下饭，又可以治病。</P><P>　　居住在瑞丽的少数民族还有食用昆虫的习惯，如蚂蚁卵、蝉、竹虫、花蜘蛛等。有的还用作招待贵宾的佳肴。</P><P>景颇“鬼鸡”<BR>    这道菜听起来怪吓人的吧，但是味道好极了！此菜可是有来历的，景颇族历史上有杀鸡祭鬼的习俗，“鬼鸡”就是供祭献鬼后，景颇族人将煮熟的鸡晾凉后撕碎，在野外佐以剁碎的姜蒜、、缅芫荽、棕檬叶等相关配料，配入盐、味精、酱油等调料制成。为了能常常吃到这道美味，聪明的景颇族人将“鬼鸡”端上了饭桌，并作为款待客人的上好佳肴。</P><P>傣味“撒撇”<BR>　　在昆明，傣味餐厅大多是人满为患，风味独到的傣味可谓是都市民族餐饮文化的一道靓丽风景线，而傣味中最具有代表性的一道菜堪称“撒撇”，由于取材的原故，要吃到真正爽口地道的“撒撇”，还是要到傣家的竹楼里去，各式美味“撒撇”是真真正正的好味道。 </P><P>景颇“绿叶宴”<BR>　　吃过景颇族“绿叶宴”，你对目前最流行的“纯天然绿色食品”的说法就会有全新的认识。坐在“绿叶宴”边，没有碗、没有勺、没有铁制的酒具，饭是竹筒烧的，菜是竹筒舂的，盛菜的是青翠的芭蕉叶，喝汤的勺是树叶折叠成的，就连酒杯也是竹节做成的，吃的是山茅野菜、纯香的土鸡，从内容到形式，从视觉到味觉，都远离了现代饮食的概念，仿佛所面对的是一席少数民族“智慧的盛宴”。
