Check out what's in the fridge, or on the rack next to the bread bin. If there is more than one bottle in either place, use your common sense. If you only have the one bottle, your choice becomes simple.</p><p>That's a cynic's view of wine and food matching, or at least a realist's view. The good people at <a href="http://web.archive.org/web/20090801054958/http://www.epicurious.com/">Epicurious.com</a> have much higher aspirations for home cooks in the USA. According to a report in the <a href="http://web.archive.org/web/20090801054958/http://www.washingtontimes.com/photos/2009/jul/27/52180/">Washington Times</a>, they have utilised a huge wine database (created by an outfit called <a href="http://web.archive.org/web/20090801054958/http://www.snooth.com/">Snooth</a>) to produce recommendations for their own database of 25,000 professionally tested recipes. The next is a floral note that those more expert than I identify as rose petals, and finally there is a hint of green tobacco. It has a fresh, clean aroma that is matched by my first sip, which reveals more citrus, traces of soft vanilla, caramel and even a little smoke.</p><p>It is easily the finest whisky I have ever tasted, but then it should be. The tiny amount of golden liquid I have been allowed to sample, which barely covers the bottom of a commemorative glass, would probably cost £500 in the unlikely event that I were ever to find it in a bar. Early for a flight, a friend and I stopped off in Rodez for a quick salad and an evening glass of rosé. The wine came in tiny glasses and there wasn't much of it - about 100ml, even less than the 125ml measure that used to mean you could reckon on getting six glasses out of a bottle and which is now derided as little more than a mouthful. </p><p>It was the perfect amount. Not just because it cost only 1 Euro apiece. Not only because when an almightily loud band started up and we needed to flee there wasn't much to down. Increasingly, restaurant ethics are coming under scrutiny, with customers concerned about everything from <a href="http://web.archive.org/web/20090801054958/http://www.guardian.co.uk/lifeandstyle/wordofmouth/2009/may/27/nobu-blue-fin-tuna-menu">bluefin tuna</a> to the <a href="http://web.archive.org/web/20090801054958/http://www.guardian.co.uk/lifeandstyle/wordofmouth/2008/apr/03/tippinginthebalance">tipping policy</a>. But if we're going to consider how restaurants treat their staff there's a lot more than just tipping to think about.<br/> <br/>The restaurant trade is notoriously stressful and it seems everyone who's worked in it has a horror story. Friends of mine have talked about being sidelined in favour of 16 year olds, who are entitled to a considerably lower minimum wage and may be more easily convinced to work double shifts and put up with the notorious tempers of the chefs. At issue: a forthcoming book from publishers <a href="http://web.archive.org/web/20090801054958/http://www.phaidon.com/">Phaidon</a> in which a bunch of international chef gods – Ferran Adrià, Mario Batali, Rene Redzepi, Alice Waters, Gordon Ramsay, Alain Ducasse, Fergus Henderson and so on – nominate their pick of up-and-coming chefs. As the list stands, when the book, Coco, is published in the autumn there will be 23 featured chefs from Asia, 21 from the US, five from Australia and even one from Oman. The UK has 17 including the likes of Jason Atherton from <a href="http://web.archive.org/web/20090801054958/http://www.gordonramsay.com/maze/">Maze</a>, Skye Gyngell from <a href="http://web.archive.org/web/20090801054958/http://www.petershamnurseries.com/">Petersham Nurseries</a> and Glynn <a href="http://web.archive.org/web/20090801054958/http://www.purnellsrestaurant.com/index.html">Purnell</a> from his eponymous restaurant in Birmingham.<br/> <br/>And from Canada? Um, not so many. In fact slightly fewer than from Oman. Which is to say, none. This is the sort of thing that drives the Canadians absolutely nuts. Photograph: Tim Hayward</p> </div> <p>I could say it was a soft Calabrian salami, I could say it was a sort of preserved pâté, I could even, at a stretch, call it a sort of hot chilli haggis, but there's one thing I can say with absolute conviction: <a href="http://web.archive.org/web/20090801054958/http://www.natoora.co.uk/shop/deli-counter/charcuterie/cured-meat/nduja-calabra-in-natural-skin/prod13357.html;jsessionid=9A4186F261586B8F5C2AA7A59E322C43.montpellier">nduja</a> is the single most exciting ingredient I've come across in ages.</p><p>Nduja is a unique salume from Calabria. It's distantly related to a sopressata in the sense that it's made up largely of pig-head bits (minus the cheeks which are used for more premium guanciale) but flavoured with spectacular quantities of red pepper. While I'm happy to tackle my fruit without 'a silver knife and fork', there are a few matters I would appreciate guidance on, particularly from a woman of the world such as Dame Barbara. </p><p>I am, you see, a bit of a food geek. " runs the blurb for Tamasin (sister of Daniel).</p><p>I can't help wondering about the people who are having to give up eating entirely. Any top tips for them? Their numbers are up more sharply than those of British shoppers forced by the recession to slum it at Lidl.
