class="scenicinfo_modifyct"><p>福州人特爱吃甜的东西，芋泥就是款甜食，作为宴席上的常菜，一般以“压轴”形式上桌。在1839年，林则徐准备盛宴回请各国领事，凉菜上完后这道芋泥被摆上桌，洋人们见不冒热气，犹如凉菜，立马大口大口地吃，结果被烫的大叫。芋泥是将槟榔芋头蒸熟后压制成泥状，以碎红枣、瓜子仁、樱桃、冬瓜糖等做辅料。色泽灰暗，虽然不冒热气，但尝起来却烫口无比，香郁甜润。</p><p style="text-align: center;"></p><p>芋泥也叫芋茸，是福建省闽菜中的传统甜食之一，芋泥常作为福州宴席上的压轴甜点推出。其中又尤以福鼎的八宝芋泥最为地道。它的盛名与其选材密切相关。福鼎八宝芋泥选材自福鼎土特产——省名牌农产品福鼎芋。福鼎芋以其个大、质松、味香而闻名，是制作八宝芋泥之上品。</p><p style="text-align: center;"></p><p>芋泥中的上品称为“太极芋泥”和“八宝芋泥”。由于猪油蒙盖，制成后貌似冷食，实则热食。在酒宴上常在收席前做为甜点推出。福建东部沿海地区皆有做芋泥的习俗。其中尤以福州芋泥最为有名，是福州地区典型的甜食。</p><p>此菜香郁甜润，细腻可后，是闽菜的传统甜食之一。每当宴席接近尾声时，上的最后一道“压轴”菜，通常都是芋泥。</p><p><strong>芋泥的做法：</strong></p><p>主料：槟榔芋头1000克。 </p><p>配料：红枣100克、樱桃15克、瓜子仁15克、糖冬瓜条50克。</p><p>调料：白糖35克、熟猪油250克。</p><p>做法：</p><p>1、将槟榔芋头去皮，每个切成4块，放在盆里，加入清水150克，上笼蒸一小时取出，放在弯板上，用刀压成茸状，拣去粗筋。红枣去皮、核，切碎分成两份。冬瓜条切成米粒状一样大小。</p><p>2、将红枣50克装在碗里，加入白糖50克，上笼屉用中火蒸五分钟取出。</p><p>3、炒锅放微火上，下猪油25克烧热，将蒸过的红枣下锅搅拌成糊状后，浇在芋泥上，再用瓜子仁，樱桃在芋泥上面装饰成太极图案状即成。</p></div>
