His day job is running his Kottu street cart, which serves curry chopped up with roti, vegetables, and spices. But he’s maybe most famous for throwing an over-the-top 36-course Wu Tang dinner a couple years ago, out of which came some other pop culture–themed dinners. He also hosts the Seattle Restaurant Podcast, which is one of the best sources of unfiltered opinions from Seattle-area chefs and restaurant owners. He’s always doing something, and now he’s doing something new: Goose Suit. The name is a deep-cut I Think You Should Leave reference, from a sketch where “buff boys” put on fake muscle shirts — “goose suits” — for an absurdist pageant. The metaphor here is that Goose Suit is a kind of “fake fancy” getup, Suntha says, that he is putting on his Kottu cart starting on November 1. The idea is inspired by the famous food stall scene in Japan, where temporary restaurants with sit-down seating are common. The way it’ll work is that there will be four seats in front of the cart, and in a kind of improvised chef’s counter experience Suntha will cook three courses — an appetizer, entree, and dessert — in front of diners. The meal plus a nonalcoholic cocktail curated by booze-free bottle shop Cheeky and Dry will run guests $45. (To-go meals will also be available.) The menu will have nothing to do with Kottu — Suntha describes it as a “chaos menu” with “weird flavor combinations.” His inspiration, he says, comes from his backstage catering gigs, where “it doesn’t matter if it’s like, authentic Chinese or authentic Mexican — just make it taste good.” Though Seattle doesn’t have the food truck culture of, say, Portland, there are lots of carts and trucks roaming the streets. But even the ones with permanent parking spots and some seating don’t normally offer prix fixe menus or charge prix fixe prices. “At first I was really apprehensive about doing a $45 meal,” Suntha says, but “the more feedback I’m getting, it’s like, 45 bucks ain’t bad for three courses.” There are several reasons Suntha is taking a break from Kottu. The first is that cooking the way he does on the cart involves constantly chopping up meat and vegetables on the grill has taken its toll. “I just slam my fist into a steel plate for eight hours a day and it’s caught up to me — my joints and everything hurts,” he says. Beyond the physical aspect, Suntha has been getting bored of making the same dish over and over again, and winters are typically slow seasons for his cart anyway, making it a good time to experiment. His day job is running his Kottu street cart, which serves curry chopped up with roti, vegetables, and spices. But he’s maybe most famous for throwing an over-the-top 36-course <a href="https://seattle.eater.com/2022/6/22/23179180/wu-tang-food-pop-up-seattle">Wu Tang dinner</a> a couple years ago, out of which came some other <a href="https://seattle.eater.com/2023/5/4/23711810/the-i-think-you-should-leave-dinner-party-madame-lous-seattle">pop culture–themed dinners</a>. He also hosts the <a href="https://www.instagram.com/theseattlerestaurantpodcast/?hl=en">Seattle Restaurant Podcast</a>, which is one of the best sources of unfiltered opinions from Seattle-area chefs and restaurant owners. He’s always doing <em>something</em>, and now he’s doing something new: Goose Suit.</p> <p id="vMITit">The name is a deep-cut <em>I Think You Should Leave </em>reference, from a sketch where “buff boys” put on fake muscle shirts — “goose suits” — for an absurdist pageant. The way it’ll work is that there will be four seats in front of the cart, and in a kind of improvised chef’s counter experience Suntha will cook three courses — an appetizer, entree, and dessert — in front of diners. The meal plus a nonalcoholic cocktail curated by booze-free bottle shop <a href="https://cheekyanddry.com/">Cheeky and Dry</a> will run guests $45. (To-go meals will also be available.)</p> <p id="tjwVgh">The menu will have nothing to do with Kottu — Suntha describes it as a “chaos menu” with “weird flavor combinations.” His inspiration, he says, comes from his backstage catering gigs, where “it doesn’t matter if it’s like, authentic Chinese or authentic Mexican — just make it taste good.”</p> <p id="F7Poa6">Though Seattle doesn’t have the food truck culture of, say, Portland, there are lots of carts and trucks roaming the streets. But even the ones with permanent parking spots and some seating don’t normally offer prix fixe menus or charge prix fixe prices.</p> <p id="VuCuye">“At first I was really apprehensive about doing a $45 meal,” Suntha says, but “the more feedback I’m getting, it’s like, 45 bucks ain’t bad for three courses.”</p> <p id="9lZGhr">There are several reasons Suntha is taking a break from Kottu. The first is that cooking the way he does on the cart involves constantly chopping up meat and vegetables on the grill has taken its toll. “I just slam my fist into a steel plate for eight hours a day and it’s caught up to me — my joints and everything hurts,” he says. Beyond the physical aspect, Suntha has been getting bored of making the same dish over and over again, and winters are typically slow seasons for his cart anyway, making it a good time to experiment.
